Our premium Desi Cow Ghee is prepared strictly using the ancient traditional Bilona method on our own farm in Udham Singh Nagar, Uttarakhand. Whole milk is curdled into thick dahi, hand-churned in bi-directional motion to obtain fresh makkhan, and slowly melted over wood fires to create thick, golden, grainy (danedar) ghee with a comforting buttery aroma and unparalleled nutritional value.

- Ethical Milking
Pure Desi Cow Milk Sourcing
We milk our grass-fed cows at dawn on our own farm in Udham Singh Nagar. We practice ethical milking where the calf is fed first, ensuring natural, stress-free milk production that keeps the proteins pure and highly nutritional.
Process specifications:
- Cows are reared in stress-free farm settings with regular outdoor pasture grazing
- Zero synthetic hormones, antibiotics, or milk-boosting injections
- Collected manually in sterile stainless-steel containers
Slow Boiling
Clarification & Sterilization over wood fires
The pure milk is slowly boiled over wood-fired stoves. This gradual process sterilizes the milk, concentrates its natural solids, and infuses it with a subtle, rustic, comforting woodsmoke aroma.
Process specifications:
- Slow wood fire prevents abrupt overheating and retains valuable nutrients
- Heated gradually for hours until perfect concentration is reached
- Gives our ghee its distinctive deep base warmth
Natural Curdling
Overnight Culturing into Thick Dahi
The boiled milk is allowed to cool down naturally to a lukewarm state. We then inoculate it with our pure, heirloom organic yogurt starter culture to ferment the milk into rich, thick, probiotic-heavy dahi overnight.
Process specifications:
- Overnight fermentation fully converts lactose into gut-friendly lactic acid
- Enriches the mixture with beneficial living digestive cultures
- Essential step: We never use direct cream/malai separation
Bi-directional Churning
The Core Bilona Method
The set curd is poured into a large churning pitcher. Using a wooden stirrer (Ravaiya) rotated clockwise and counter-clockwise, the curd is churned slowly. This separates pure, frothy butter (Makkhan) from buttermilk.
Process specifications:
- Cold churning preserves the natural short and medium-chain fatty acids
- No motor-heat is generated, keeping the healthy fats structurally intact
- Separates fresh makkhan from wholesome buttermilk (Chhaas)
Slow Melting
Grainy Crystallization into Pure Gold
The separated fresh makkhan is washed and transferred to brass vessels, then slow-cooked over a mild wood fire. Water content evaporates completely, and milk proteins caramelize and settle, leaving clear golden ghee.
Process specifications:
- Gently clarified until it achieves its signature sweet, toasted-caramel butter aroma
- The caramelized milk solids are filtered out completely (making it casein & lactose free)
- As it cools, it naturally crystallizes into beautiful sand-like grainy (danedar) granules
